Ingredients

  • Avocado Toast
  • 2 large ripe avocados
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste
  • 4 thick slices of nice bread toasted
  • Smoked Caper Topping
  • 2 tablespoons Imported Non-Pareil Capers drained
  • 2 slices smoked salmon
  • 4 sliced thinly sliced red onion
  • Egg and Sun-Ripened Tomato Topping
  • 1 large, hard-boiled egg quartered
  • 2 tablespoons coarsely chopped
  • 1 tablespoon roughly chopped fresh parsley
  • Bell Pepper and Basil Topping
  • 2 pieces Roasted Red Bell Peppers coarsely chopped
  • 1 tablespoon thinly sliced fresh basil
  • Balsamic glaze for drizzling
  • Greek Olive and Feta Topping

Instructions

  1. Halve the avocados lengthwise and remove the pits. Scoop the flesh into a small bowl. Add lemon juice, salt and pepper and mash to a chunky paste. Spread on toasted bread and top each avocado toast with the suggested toppings.
