- Avocado Toast
- 2 large ripe avocados
- 1 tablespoon fresh lemon juice
- Salt and pepper to taste
- 4 thick slices of nice bread toasted
- Smoked Caper Topping
- 2 tablespoons Imported Non-Pareil Capers drained
- 2 slices smoked salmon
- 4 sliced thinly sliced red onion
- Egg and Sun-Ripened Tomato Topping
- 1 large, hard-boiled egg quartered
- 2 tablespoons coarsely chopped
- 1 tablespoon roughly chopped fresh parsley
- Bell Pepper and Basil Topping
- 2 pieces Roasted Red Bell Peppers coarsely chopped
- 1 tablespoon thinly sliced fresh basil
- Balsamic glaze for drizzling
- Greek Olive and Feta Topping
- 2 tablespoons Pitted Greek Kalamata Olives coarsely chopped
- 1 tablespoon crumbled feta
- 1 tablespoon roughly chopped fresh dill
- 2 teaspoons lemon zest
Instructions
- Halve the avocados lengthwise and remove the pits. Scoop the flesh into a small bowl. Add lemon juice, salt and pepper and mash to a chunky paste. Spread on toasted bread and top each avocado toast with the suggested toppings.
