Fire Grilled Kofta with Zesty Tzatziki

These grilled lamb koftas are seasoned to perfection and paired with a creamy peperoncini tzatziki sauce that adds a tangy, spicy twist. This Mediterranean-inspired dish is bursting with bold flavors and makes for a deliciously satisfying meal or party appetizer.
- 1 English cucumber grated
- 2 cups Greek yogurt
- 1/2 cup Sliced Golden Greek Peperoncini drained and minced
- 2 garlic cloves grated
- 2 tablespoons chopped fresh dill
- 2 tablespoons fresh lemon juice
- Salt and peppers to taste
- 1 lb. ground lamb
- 1/2 a yellow onion grated
- 1/4 cup panko breadcrumbs
- 2 garlic cloves grated
- 2 tablespoons chopped fresh cilantro
- 1/2 cup Pitted Greek Kalamata Olives minced
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 2 teaspoons smoked paprika
- 1 teaspoon ground cinnamon
- 8 to 12 Small (4-5 inch) bamboo paddle picks
- Mediterranean Peperoncini Hot Sauce to garnish
- Sliced Golden Greek Peperoncini to garnish
- Pickled Red Onions to garnish
- Small mint leaves to garnish
Instructions
- To make the tzatziki, grate the cucumber into a bowl lined with a clean kitchen towel and, once grated, gather the towel together and ring all of the moisture out of the shredded cucumber.
- Discard the liquid and add the shredded cucumber back to the bowl. Add the Greek yogurt, Mezzetta® Sliced Golden Greek Peperoncini, garlic, fresh dill, lemon juice and salt and pepper to the bowl and stir to combine. Set aside until ready to use.
- Add the lamb, grated onion, panko, garlic, cilantro, Mezzetta® Pitted Greek Kalamata Olives, cumin, coriander, smoked paprika, cinnamon and salt and pepper to a large bowl and mix to combine. Divide the mixture into 1-ounce portions and form the koftas onto the bamboo skewers and grill on both side until cooked through. Transfer to the oven to finish if needed.
- Spread a generous amount of tzatziki on a serving platter, add the kofta and top with a drizzle of Mezzetta® Peperoncini Hot Sauce, Mezzetta® Sliced Golden Greek Peperoncini, Mezzetta® Pickled Red Onions and mint leaves to garnish.
